The Ultimate Oatmeal Chocolate Chip Craisin Cookie!

What do you do when your husband is away on a golf trip and you are snowed in the house with two little girls? You bake! Mira, Amelia, and I whipped up a batch of the best cookies in the world. And because I like you, I'm going to share the recipe!

Ultimate Oatmeal Chocolate Chip Craisin Cookies

What you need:
1 1/4 cups packed brown sugar
1 cup butter, softened
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
2 eggs
3 cups quick-cooking OR old fashioned oats
1 1/3 cups flour
1 cup craisins
1 bag milk chocolate chips


What you do:
First, find the cutest little helper you can.
Heat oven to 350 degrees. Cream together butter and sugar. Add baking soda, vanilla, salt, and eggs. Mix thoroughly.
Add flour and mix. Add oatmeal and mix.

Then stir in by hand craisins and chocolate chips.
Use a cookie scoop and put the balls on a cookie sheet. Bake for about 11 minutes.
Tip #1: Because I like flatter cookies rather than thick ones, with about 2 minutes to go in cooking time, I raise the cookie sheet in the oven and drop it on the rack. It flattens the cookies out a little. I learned that trick from my mom!

Tip #2: I take the cookies out of the oven just before they are actually done to prevent overcooking. They finish up cooking on the cookie sheet, then transfer them to a wire rack.
One satisfied customer!

They look so good. Are you turning into Grandma Adeline? I know she wants to get back to her cookie sheets,sugar,eggs and flour.

Ooooh, those sound good! I imagine they'd freeze well, too (which is important, since having a batch of cookies sitting on the counter is just too tempting to me).

They DO freeze well! I just eat them out of the freezer. What I should do is freeze them in balls without baking, then just bake a few at a time. That would make me think twice about eating them, and I'd always have them on hand for company!

Looks really good...Kind of reminded me of a Martha Stewart segment! I was just a little concerned about Mira and the mixer. I hope it was turned off! Save some for out trip up there in March!! Love, Mom

Mom, the mixer was indeed off. Just a photo op! Mira isn't allowed to stir while the mixer is running. No worries.
